Introduction to Allergens Training
A short introductory training session delivered by a Trading Standards Officer.
This training aims to give you and your staff an introduction to the issues surrounding allergens within the context of a food business.
This will help you and your staff have an understanding of the risks posed by allergens and how these should be managed.
Level 2 Award in Food Allergen Awareness and Control in Catering
Overview
This training is designed to provide knowledge and understanding of food allergens and foods commonly causing intolerances, looking at topics such as:
- characteristics and effects
- the importance of effectively communicating information regarding allergenic ingredients to customers
- how staff can minimise the risk of cross-contamination from allergenic ingredients.
Who is it for?
This qualification is aimed at food handlers and other staff involved in food preparation and service who work within the catering industry.
Level 3 Award in Food Allergen Management for Catering
Overview
Learners achieving this qualification will have knowledge and understanding relating to the control of food ingredients, including allergens, at all stages of food purchase and production.
Topics covered include:
- the manager’s role in ensuring food ingredients are effectively managed
- accurate communication of ingredient information from supplier to consumer
- the importance of practical controls to reduce the risk of allergenic contamination
- methods of managing ingredient controls and procedures.
Who is it for?
This course is for anyone with responsibility for ensuring allergens are managed effectively, such as those responsible for the purchase, delivery, production and service of food.
It is also suitable for anyone who manages a small catering business.

Duration and assessment
Most courses are delivered in one day and are assessed by a multiple choice exam taken on the day after the training is delivered.
